  • 6 lbs boneless, skinless chicken thighs, cut into 1-inch cubes

  • For the Garlic Sauce:

  • 1 cup olive oil

  • 24 cloves garlic, minced

  • 1/4 cup lemon juice

  • 1 tsp salt

  • For the Fattoush Salad:

  • 4 romaine lettuce hearts, chopped

  • 4 cucumbers, diced

  • 4 tomatoes, diced

  • 2 red onions, thinly sliced

  • 4 cups pita chips

  • 1/2 cup chopped parsley

  • 1/2 cup chopped mint

  • 1/4 cup lemon juice

  • 3 tbsp olive oil

  • 4 tsp sumac

  • 1 tsp salt

Directions

  • In a large bowl, combine all the marinade ingredients. Add the chicken cubes and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
