Ingredients

  • 1 1/4 cups all-purpose flour

  • 3 1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 1 tablespoon white sugar

  • 1 1/4 cups milk

  • 1 egg

  • 3 tablespoons butter, melted

  • 2 ripe bananas, mashed

Directions

  • In a large bowl, mix flour, baking powder, salt and sugar.
  • In a separate bowl, mix milk, egg and melted butter.
  • Pour the milk mixture into the flour mixture and whisk until moist (don’t over mix).
  • Add the mashed ripe bananas until it’s well combined.
  • Heat a lightly oiled griddle or frying pan over medium high heat.
  • Scoop the batter onto the pan, using approximately 1/4 cup for each pancake.
  • Cook until pancakes are golden brown on both sides.
  • Serve the pancakes hot with your favorite toppings like sliced bananas, walnuts, chocolate chips, maple syrup or whipped cream.
